Even the littlest hands can help give moms the treat of breakfast in bed.  Help mom feel like she’s at a spa when you arrive bedside with one of these breakfast-in-bed treats.  P.S. Clean up the kitchen!

 

Sausage and Egg Breakfast Pizza

 

Ready-to-serve pizza crusts make it easy to put together this morning meal.

Total Time: 26 min
Makes: 4 servings

 

Ingredients:

1 package (8 ounces) frozen brown-and-serve pork sausage links, cut into ½ inch pieces

6 eggs, beaten

4 ready-to-serve pizza crusts, 6 inches in diameter

1 ½ cups shredded Cheddar cheese (6 ounces)

 

To Prepare:

1.  Heat oven to 400 degrees.

2. Spray 10-inch non-stick skillet with cooking spray

3. Over medium heat, cook sausage in skillet about 3 minutes, stirring occasionally, until brown

4. Remove sausage from skillet and set aside.

5. Pour eggs into skillet.  As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom.  Do not stir. Cook 4 to 5 minutes or until eggs are thickened throughout but still moist.

6. Place pizza crusts on ungreased cookie sheets. 

7. Top each with eggs and sausage. 

8. Sprinkle with remaining cheese.

9. Bake 10 to 12 minutes or until cheese is melted.

 

Serve with Sparkling apple cider or your favorite fruit juice goes well with this good morning goodie.

 

Variation:

For a veggie lift, add chopped tomato, green bell pepper and mushrooms before topping with the final cheese layer.
