Dana’s Penuche (brown sugar fudge)



¾ c. real butter (1 and ½ stick)

2 c. packed brown sugar

½ c. evaporated milk

1 tsp. Vanilla

3 c. sifted powdered sugar

1 c. chopped walnuts or pecans (optional)



In a microwave proof Pyrex batter bowl melt butter for 45 seconds to a minute in the microwave.  Add brown sugar and milk.  Cook for 2 minutes, stirring after each minute.  Now cook until mixture begins to boil…then boil for 3 minutes.  Remove from microwave and cool at room temp. until it reaches 110 degrees on a candy thermometer.  I transfer this mixture to my mixer bowl.  Add vanilla and add powdered sugar one cup at a time until smooth.  Add nuts if desired.  Pour into an 8x8 pan lined with plastic wrap.  Refrigerate and then cut into small pieces.  This is so good it should be illegal. 


The fudge is soft at room temp. So store in fridge.
