Almost No-Carb Peanut Butter Cookies

 

These little morsels will melt in your mouth. And even better, there are only 3 ingredients.

 

1 cup peanut butter (creamy or crunchy)

1 cup Splenda

1 egg

 

Combine all ingredients and mix until well blended. With a spoon, scoop batter and roll into small balls. Place balls on ungreased cookie sheet. With a fork dipped in Splenda make crisscross marks on top of each cookie to flatten.

 

Bake at 350 degrees for 8-10 minutes or until lightly browned.

 

Cool on rack.

 

Makes 8-10 cookies. This recipe can easily be doubled or tripled.
